Manual harvest into 25 kg boxes in the third week of September. Foot treading and spontaneous fermentation with indigenous yeasts in a granite lagar. Followed by 9 months of skin maceration in stainless steel and 5 months of refinement in used French oak barrels. All movement of the must and wine is done manually. No addition of enological products, except for small amounts of sulfur. Not stabilized, filtered, or fined.
