Manual harvesting between the last week of September and the first week of October. Destemming and maceration for 15 days. Spontaneous fermentation with indigenous yeasts occurred in an open stainless steel lagar for 8 to 10 days, followed by a 6-month aging period in stainless steel tanks, in contact with the lees. Aging for 3 years in 400-liter oak barrels.
