Hand harvesting between the last week of September and the first week of October. Destemming and maceration for 15 days. Spontaneous fermentation with indigenous yeasts occurred in an open stainless steel lagar for 8 to 10 days, followed by 6 months of aging in stainless steel tanks in contact with the primary lees. Aged for 3 years in used 400-liter oak barrels.
