The grapes are placed in the drying room (in a 19th-century tower) for 6 months. Pressing lasts for 8 hours at 0.2 bar. The must, about 30% of the original weight, ferments with indigenous yeasts in caratelli, followed by aging in caratelli for 6 to 10 years. Bottled without filtration.
