Hand harvested to 16kg boxes. Gentle pressing and spontaneous fermentation with indigenous yeasts. Gravity decanted to oak barrels to complete alcoholic fermentation and malolactic fermentation.
Unfiltered, 50 mg total Sulphur added at bottling.
