Manually harvested at the right point of maturation. Non-fermentative maceration in 1000-liter vats for 2 days, after which it was pressed. Spontaneous fermentation with indigenous yeasts and aging in 20 hectoliter cement tanks. Malolactic fermentation completed. No addition of enological products, except for small amounts of sulfur.
