Fermentation: used oak barrels
Aging: 6 months in used oak barrels
Alcohol: 12.5%
SO2 Total: 50 mg/l

Hand harvested to 16kg boxes. Gentle pressing and spontaneous fermentation with indigenous yeasts under controlled temperature. Gravity decanted to finish alcoholic and malolactic fermentations. Unfiltered, 50mg total Sulphur added at bottling.
