Manual harvest during the first two weeks of September. Destemming and maceration for 4 to 5 days. Spontaneous fermentation with indigenous yeasts occurred in an open stainless steel lagar for 8 to 10 days, followed by 8 to 9 months of aging in stainless steel vats in contact with the primary lees.
