Fermentation: used french oak barrels
Aging: 6 months in used french oak barrels
Alcohol: 14.2%
SO2 Total: 50 mg/l

Hand harvested to 16kg boxes. Foot treading and spontaneous fermenation with indigenous yeasts for 14 days. Gravity decanted to oak barrels to complete fermentation and malolactic fermentation. Unfiltered, 50mg total Sulphur added at bottling.
