Medieval de Ourém is a wine made like it was made in the medieval times in the Ourém region, from white and red grapes.
After a manual harvest, the white grapes are pressed in a manual basket press. The must resulting from this pressing is filtered through a wicker basket and sent to wooden barrels that are filled to 80% of total capacity (550 liters). Fermentation is spontaneous without the addition of yeasts. The red grapes are manually harvested and quickly transported to the winery, where they are destemmed and crushed into a wooden tank. Spontaneous fermentation occurs with the must in contact with the skins for 8 days. Every day, 2 or 3 times a day, the skins are submerged using a "rodo" (a traditional tool). On the eighth day, almost at the end of fermentation, the red must along with the skins is added to the wooden barrels where the white must fermented, thus filling the remaining 20% of their capacity..
