Grape varieties: 70% Sauvignon blanc, 30% blend of traditional native white grapes
Altitude: 450 to 500 m
Fermentation: in stainless steel tanks with skin contact
Aging: 12 months in used french oak barrels
Production: 946 bottles
Alcohol: 13%
SO2 Total : 69 mg/l
The grapes harvested at the end of August fermented in stainless steel tanks in contact with the skins. Partial de-stemming and skin contact fermentation for 5 days. Pressing to aged french oak barrels where it continued fermenting and aging for 12 months. Spontaneous fermentation with indigenous yeasts.
Tasting notes: very discreet in the nose, a touch of capers and peppers. Textured and very fresh in the mouth.
