A wine that expresses and represents a terroir and a region and which the grapes are grown 8km from the ocean.
Grapes harvested typically earlier in search of much fresher notes, less sugar concentration and higher natural acidity. Hand harvest and very rigorous selection of the best grapes into 15kg crates.
Two to four days skin contact, spontaneous fermentation with wild yeast and without the usage of any enology product. 50% of the wine ages for 7 months in French oak barrels and 50% in stainless steel tanks. Unfined and Unfiltered.
While tasting shows up with a very deep ruby colour, earthy, red berries and spices notes on the nose. On the palate shows mineral, fine, fresh but intense with slightly present polished tannins. The after taste is long and deep.
