Manual harvest during the last week of September. Foot treading and 2 days of maceration before pressing. Spontaneous fermentation with wild yeasts and aging on lees without batonnage in used French oak barrels for 10 months. No addition of enological products, except for small amounts of sulfur. Not stabilized, filtered, or fined.
