Manual harvest on 9th of September. Foot trodden and ferments on granite open vat with indigenous yeasts for 10 days. After that ends the fermentation in stainless steeel with the skins of avesso and the stems of Castelão, where it macerates for 6 months. Not finned or clarified and no SO2 added.
