Manual harvest on 17th of August and 2nd of September. 2 days of skin contact, foot trodden. Spontaneous fermentation with indigenous yeasts in 2000 l cement vats. Indigenous yeasts, not finned or clarified and no SO2 added. Bottled before the end of fermentation. Not disgorged.
