Manual harvest on 15th of September of old vines. Foot trodden. Spontaneous fermentation on granite open vat with indigenous yeasts for 8 days. After that, it ends the fermentation in 2000 l cement closed vats, where it stays for 9 months. Not finned or clarified and no SO2 added.
