Manual harvest on 12th of September. Foot trodden and ferments on granite open vat with indigenous yeasts for 2 days. After that ends the fermentation in 1000 l cement closed vats. Aging in stainless steel tanks and cement tanks. Not finned or clarified and no SO2 added.
